A New Take on Christmas Dining: HCIM Students Highlight Culinary Excellence

The Department of Hotel, Catering, and Institutional Management (HCIM) at Accra Technical University redefined the essence of Christmas culinary traditions with a dynamic showcase on 17th December 2024. Held in the University Auditorium, the event provided a platform for students to demonstrate their creative flair, technical expertise, and leadership in the hospitality industry.

The Head of the Department, Mrs. Lynda Dede Graham, set the tone for the event with a call to reimagine festive menus. “It’s time to change the narrative,” she remarked. “Instead of the usual chicken and turkey for Christmas, let’s embrace innovative alternatives such as catfish fusion to create unique and memorable dining experiences.” Her message encouraged students and attendees to think beyond conventional boundaries when crafting festive dishes.

Mrs. Graham also emphasised the wider benefits of such events. “Active participation in these programmes helps students develop essential skills while balancing academics, creativity, and leisure. It nurtures personal attributes such as discipline, confidence, and a strong sense of responsibility—qualities that are crucial for success in both personal and professional spheres,” she noted.

A standout feature of the event was the Lessons and Carols segment, where students took centre stage, blending festive traditions with contemporary creativity. Their storytelling, music, and organisational efforts created an engaging and memorable atmosphere, showcasing their talents beyond the kitchen.

Adding an industry perspective to the event, Frances Arthur, Key Account Manager at Accra City Hotel, led an interactive session with the students. She discussed the role of internships in bridging academic learning with real-world experience and encouraged students to seize opportunities to prepare them for successful careers in the hospitality sector.

The event seamlessly integrated educational value, industry insight, and festive cheer, providing students with an invaluable opportunity to hone their skills while connecting with industry professionals. It also reinforced Accra Technical University’s commitment to fostering innovation and equipping students to meet the dynamic demands of the hospitality sector.

Ultimately, the showcase was a celebration of ingenuity, tradition, and forward-thinking. It not only reimagined Christmas dining with creative alternatives such as catfish but also inspired the next generation of hospitality leaders to challenge norms and lead with innovation.
