Her contributions also include organising renowned fashion shows, such as the Accra Technical University Fashion Show, which celebrate African heritage and culture. Baxey is an adjunct (part-time) lecturer at Accra Technical University, where he teaches media relations, strategic public relations planning and client relations, and creative thinking and problem-solving. He is an accredited public relations practitioner and the founder of the Newsroom Contest, an extracurricular activity that tests, broadens horizons, and provides experiential learning in news writing or reporting, strategic communication, communication research, and public speaking to undergraduate students pursuing communication studies and related programmes. His doctoral research focuses on health communication and the prevention of infectious diseases (specifically COVID-19) at the National Borders of Ghana. He holds a Master of Arts in Public Relations and a Bachelor of Arts in Communication Studies (Public Relations Option) from the Ghana Institute of Journalism (GIJ), which is now called the University of Media, Arts and Communication (UNIMAC). He has over 15 years of practice in communications and public relations, both in the public and private sectors, spanning the fields of journalism, client service, print advertising, public communication, corporate communication, protocol and event management, communication research, and science communication, among others. Professionally, he works at the Ghana Atomic Energy Commission (GAEC) as an administrative officer responsible for communication and public relations. Prior to joining the GAEC, he was the Head (Officer-in-Charge) of two units of the Public Affairs Department at the National Headquarters of the Ghana Immigration Service: the Media Relations Unit and the Information and Stakeholder Relations Unit. He was also the Designated Information Officer for the Right-to-Information law. He also served as the Protocol Officer for the Protocol and Event Management Unit and the Personal Assistant to the Head of the Public Affairs Department at the National Headquarters of the Ghana Immigration Service. Additionally, he was the first public relations officer for the Immigration Service Academy and Training School (ISATS) at Assin Foso in the Central Region. He cut his teeth as a journalist at the Daily Graphic of the Graphic Communications Group Limited as a news reporter (intern). She was named Head of on January 1, 2020, and reappointed August 1, 2022. She’s currently the Director, Quality Assurance and Academic Planning. Professor Otu is a Food Science Engineer whose research focus includes the extraction of bioactive compounds from plants for food, pharmaceutical and cosmetic product development. She has led investigations of polysaccharides extraction from Sorghum bicolour L. and Moringa oleifera Lam. dried leaves using aqueous/ ionic liquid aqueous two-phase system and ultrasound technology and has served as PI on ARIF grant on the usage of bioactive Ghanaian wild mushroom in the development of anti-cancer snacks. Professor Otu has currently authored and co-authored 18 SCI publications with 282 citations. She is the author of “Reviews on mechanisms of in vitro antioxidant, antibacterial and anticancer activities of water-soluble plant polysaccharides” and “Sorghum Bicolor L. leaf sheath polysaccharides: Dual frequency ultrasound-assisted extraction and desalination”. Ongoing is research on the development of soap and cream with dried Phyllantus nuriri and Azadirachta indica leaves. She serves on academic, faculty and departmental boards. She is also a cognate representative of the Faculty of Built Environment, Accra Technical University, an external verifier for the Commission for Technical & Vocational Education and Training, a reviewer of the Journal of Food Science and Technology International, an academic counsellor, a member of Departmental advisory curriculum development and Quality assurance committees. Professor Otu served as a cognate member of the Board of Engineering, secretary of PTA Executives, Oasis Montessori and Senior Coordinator of Vacation Bible School and Young Generation Department, Calvary Baptist Church. Professor Otu graduated from Jiangsu University, Zhenjiang Province, China, in June 2022 and received her PhD. in Food Science and Engineering from the School of Food and Biological Engineering, in December 2021. She also received her second degree in MSc. Food Science and Technology and her first degree in BSc. Biological Sciences from KNUST in 2010 and 2005 respectively.
