Vida Doku holds a Master of Science (MSc.) in International Hotel Management from the University of Surrey, UK and a Bachelor of Education (BEd.) Home Economics from the University of Cape Coast. She is a Certified Hospitality Educator (CHE) with over 15 years of teaching experience. Vida has held the positions of Examinations Officer and Head of the Hotel, Catering, and Institutional Management Department. During her tenure,  she pioneered weekly hotel visits for students to reputable hotels within Accra, significantly enhancing their practical learning experiences. Her research interests focus on institutional food service, particularly in the areas of health and sustainability. She is especially interested in exploring healthy and sustainable food service practices within institutional eateries in low-and lower-middle-income countries. Driven by her passion for advancing knowledge in this field, Vida is currently pursuing a  PhD programme at the University of Helsinki, Finland.
